9 Minute Garlic Lemon Shrimp Stir-Fry

Ingredients (Serves 2):

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 pound (450g) shrimp, peeled and deveined (fresh or frozen)

  • 1 medium zucchini, sliced into thin rounds

  • 1 cup cherry tomatoes, halved

  • Juice of 1 lemon

  • Salt and pepper to taste

  • Optional: Cooked rice or quinoa for serving

Instructions:

  1. Heat the pan (1 min):
    Heat olive oil in a large skillet over medium-high heat.

  2. Cook garlic and shrimp (3 mins):
    Add minced garlic to the pan and sauté for 30 seconds until fragrant. Toss in the shrimp and cook for 2 minutes on one side, then flip and cook for 1 more minute.

  3. Add veggies (4 mins):
    Add zucchini and cherry tomatoes to the pan. Stir-fry for about 3-4 minutes until the zucchini is slightly tender and tomatoes start to soften.

  4. Flavor it up (1 min):
    Squeeze fresh lemon juice over the mixture, and season with salt and pepper to taste. Stir well to combine.

  5. Serve and enjoy:
    Serve immediately over cooked rice or quinoa if desired, or enjoy on its own for a low-carb option.
