9-Minute Caprese Chicken
Ingredients (Serves 2):
2 boneless, skinless chicken breasts (about 6 oz each)
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
Salt and pepper to taste
1/2 cup cherry tomatoes, halved
2 slices fresh mozzarella (or shredded mozzarella)
2-3 fresh basil leaves, chopped
1 tablespoon balsamic glaze
Instructions:
Season the chicken (1 min):
Rub the chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and pepper.Cook the chicken (5 mins):
Heat a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes on one side until golden brown. Flip and cook for another 2-3 minutes until the internal temperature reaches 165°F (75°C).Add toppings (2 mins):
Lower the heat to medium. Top each chicken breast with a layer of cherry tomatoes and a slice of mozzarella. Cover the skillet and cook for 1-2 minutes until the cheese melts.Finish and garnish (1 min):
Transfer the chicken to plates, drizzle with balsamic glaze, and sprinkle with fresh basil.Serve:
