Ingredients (Serves 2):
6 ounces (170g) spaghetti or your favorite pasta (regular, whole wheat, or gluten-free)
1 ripe avocado, pitted and peeled
1 clove garlic
2 tablespoons olive oil
Juice of 1 lime or lemon
2 tablespoons grated Parmesan (optional, or use nutritional yeast for vegan)
Salt and pepper to taste
Optional: Cherry tomatoes, fresh basil, or arugula for topping
Instructions:
Cook the pasta (4 mins):
Bring a pot of salted water to a boil. Cook the pasta according to the package instructions (usually 4-6 minutes for quick-cooking varieties).Make the sauce (3 mins):
While the pasta cooks, blend avocado, garlic, olive oil, lime/lemon juice, Parmesan (if using), and a pinch of salt and pepper in a food processor or blender until smooth and creamy.Combine pasta and sauce (2 mins):
Drain the pasta, reserving a small cup of pasta water. Toss the pasta with the avocado sauce, adding a splash of reserved pasta water for a silkier texture if needed.Serve and garnish:
